Season and marinate the fish with whatever flavour you fancy. Instead of wrapping the fish in foil as we normally do. We place the fish on a piece of banana leaf and place them on the toaster pan. Turn on high heat. When the eye of the fish has popped out, turn the fish over to the other side. Use a fork to poke the centre of the fish to check whether it is done or not.
